Cheesy Smokin’ BBQ Chicken Sandwich

Sandwiches – I love them. I could (and sometimes do) eat them for breakfast, lunch and dinner. They are so versatile – no one sandwich has to be the same!

Lately I have been obsessed with all things barbeque. The sweet, smokey flavor adds a nice punch to any savory dish. Why I never thought to add this condiment into a sandwich earlier is beyond me, but better late than never.

The other star of this meal – the bread. Sourdough bread will and forever be my favorite. I found this whole wheat sourdough bread at a local health food store. So flavorful, so good.


Cheesy Smokin’ BBQ Chicken Sandwich

Sandwich 1


  • 2 slices of whole wheat sourdough bread
  • 2 slices of Applegate Farm BBQ Sliced Chicken Breast
  • 2 Slices of Sargento Ultra Thin Provolone Cheese
  • 1 cheese wedge
  • 1 fresh Roma tomato
  • 1 Tbsp BBQ Sauce


  1. Gather your ingredients
  2. spread both slices of bread with the cheese wedge. I used Stop & Shop White Cheddar, but any cheese wedge will work.
  3. On one slice of bread place the deli meat.
  4. On the other slice of bread place the cheese.
  5. Drizzle both sides with the BBQ sauce
  6. Slice the Roma tomato and place on either slice of bread.
  7. Toast the sandwich until the cheese has melted.

April 2014: One of the Best Months

April has always been my favorite month for as long as I can remember. This past April pretty much takes the cake though.

I kicked off the month with a trip to Charlottesville with my roommate and completed my second marathon.


Found out I was matched to Cal Poly SLO and placed in the beautiful Santa Barbara.


Walked the 3.2 for 32 to remember the 32 beautiful Hokies who are no longer with us


and ate some epic food


Crazy to think that in 9 short days I will be a college graduate. Yikes – don’t think I am ready for that! However, I am really REALLY excited to begin a new chapter in my life…especially since it takes me one step closer to my dream job. The California weather doesn’t hurt either ;)

Quick & Easy Caprese

My Italian heritage strikes again.

This past summer I took advantage of my mother always having fresh mozzarella cheese in the house. To say mozzarella cheese is a staple in our house would be an understatement. Combine mozzarella with tomatoes and basil pesto hummus, well you have yourself a winner!

Basil Pesto Caprese Salad Sandwich cas


  • 2 slices of bread (I used whole wheat)
  • 1/2 small tomato
  • 1 oz. mozzarella cheese
  • 6 artichoke hearts
  • 2 Tbsp Sabra Basil Pesto Hummus


  1. Spread hummus between the two slices of bread
  2. Slice the tomato and artichoke hearts and place on pieces of bread
  3. Layer with mozzarella cheese.
  4. Fold sandwich halves

Dallas through Food – Part 1.

Oh hey. Yes, I know I said I needed a break/was done, but to be honest I miss posting pictures and talking to you all about running and food. Two passions of mine that I’m not ready to give up just yet.

Alright, so if you don’t know (which I wouldn’t expect you to) tomorrow is the Dallas Big D Half Marathon. I am running it with my dad – it is our third race together and I couldn’t be happier. Aside from the seeing my dad, I have fallen in love with Dallas. You think I’m kidding when I found a Grad Program in Kinesiology that isn’t all too far away for visits. But that is for another time.

Anyways, here is the good stuff.

I’ve Got Some Beef

in my sandwich that is!

First off – can we just give a BIG Congrats to all the lady marathoners today!? Epic race. I do feel bad for Desiree Davila because she had to pull with a hip flexor injury :(

Confession: about 4 months ago was the first time I had ever had roast beef. I was always a turkey & chicken kind of gal when in game to my lunch meat. One night I decided to switch it up at my favorite sandwich spot and I was so glad I did! Not only does roast beef taste great, but it is a lean option when choosing red meat and has more iron than chicken and turkey! Iron can only benefit runners – healthy red blood cells allow for more oxygen to be transported to muscles during intense exercise, thus preventing fatigue! And I must say, roast beef taste pretty darn good!

Sautéed Spinach & Garlic Roast Beef Sandwich


  • 2 generous handfuls of spinach
  • 1/2 tomato, sliced
  • 2 slices of Boars Head London Broil Roast Beef
  • 2 slices of bread (I used whole grain oatmeal by Pepperidge Farm)
  • 1 Laughing Cow Garlic & Herb Cheese Wedge
  • 2 TBSP of Part Skim Ricotta Cheese


  1. In a small skillet/pan, crank the dial to medium and lightly coat the pan with cooking spray/olive oil
  2. While the pan is heating, combine the ricotta & laughing cow cheese wedge. Feel free to add extra seasonings & spread onto two slices of bread
  3. Slice tomatoes.
  4. Once the pan is heated, add the spinach and saute for a couple minutes – until spinach is deep in color and a little wilted, but not dried out.
  5. Place spinach on one slice of bread.
  6. Top the spinach with the sliced tomatoes & roast beef.
  7. Place other slice of bread on top to complete the sandwich
  8. Enjoy :)
