All the Food

Well hey there!

Long time to no chat! I had the best of intentions of becoming a regular blogger over the summer but between graduation, trips to NYC, hanging around town and getting ready to move to California, my little corner of the internet was forgotten. I have actually been toying with the idea of rebranding/shifting towards a different focus as my interest has hanged since I started this blog. More to come later but there are going to be some changes.

Lets catch up on more important matters, delicious food. I got this idea from Imma Eat That – highlight some of the amazing meals/snacks I’ve been muchin’ on throughout the week.

PES Statements – A Real Life Application

Welp, my fall semester is officially over!

Grades are in, grad school applications submitted and holiday festivities are winding down.

Now I just need to sit down with DICAS and my winter break will be complete.

To say I learned a lot about nutrition this semester would be an understatement. Medical Nutrition Therapy (MNT) was one of the most challenging classes of my undergrad. One thing I learned is that PES Statements can always use some practice ;)

PES –> Problem. Etiology. Signs & Symptoms.

Homesickness RT not being home in 11 months AEB two week obsession with my moms Italian roasted potatoes.

Extreme happiness RT running a spring marathon & Michael Buble picture book AEB tears, shock, giggles, googling restaurants and creating a flexible training plan.

Me

Overall, I am happy to be back at home in Connecticut and surrounded by those who love and know me best. Just because Christmas is over doesn’t mean I will stop listening to holiday tunes/holiday movie marathons ;)

Lose, Win

We all have those brands that we gravitate to. Personally, I’ve always been an Amy’s, Kashi, Evol & Cedar Lane girl when it comes to frozen meals. They very rarely let me down in terms of flavor, texture and nutrition. This held true for Cedar Lane. Everything I tried tasted fantastic and dare I say, almost like homemade. Sadly, the morning I sat down with this bad bay turned into a major disappointment

I mean, it sounded promising. Spinach, roasted tomatoes and potatoes along with some eggs…sign me up! Eggs just taste amazing with spinach and tomatoes so naturally I thought this would be epic. Yeah no.

ย This bake even looked promising. You can see the eggs, abundant spinach and roasted tomatoes. Under that was a layer of warm potatoes. The smell in the house was amazing. My stomach started to growl because it smelled that. good. Unfortunately there was no flavor. I’m not even talking bland. This Egg White dish tasted like nothing. I even added heaps of basil & garlic powder and it didn’t help. The only redeeming factor was the soft pillowey texture of the potatoes.

1 Coffee Bean – Hands down.

However, there was one (okay maybe 5) redeeming factors that went into my breakfast. It was these sweet delicious things

I turned this recipe into mini muffins, because lets me honest, everything taste better in muffin form ;) The Justin’s Maple Almond Butter ended the meal on a sweet note.

Moral of the story: always end breakfast with a little treat.

Friday Favorites

1. Jen’s Breakfast “Baked” Potato. I seriously cannot get enough of microwaved potatoes topped with guacamole & eggs. I usually add salsa, corn, and a laughing cow cheese wedge. Not going to lie, I’ve had this for lunch or dinner for the past 5 days. Just make it – I promise you won’t regret it!

2. Double French Toast Bagel with Cookie Butter Spread. No, I really don’t think I need further explanation. The bagel is a French Toast Bagel and then I prepared it like I would any other french toast delicacy and topped it with Trader Joe’s Cookie Butter Spread. Happy belly for sure.

3. Eggplant fries. Yes, I ate a whole eggplant for lunch one day with some marinara sauce. Fiber belly? You have no idea. Delicious? Heck yes!
