April 2014: One of the Best Months

April has always been my favorite month for as long as I can remember. This past April pretty much takes the cake though.

I kicked off the month with a trip to Charlottesville with my roommate and completed my second marathon.

Crazy to think that in 9 short days I will be a college graduate. Yikes – don’t think I am ready for that! However, I am really REALLY excited to begin a new chapter in my life…especially since it takes me one step closer to my dream job. The California weather doesn’t hurt either ;)

Before the Hype

Before the recent hype of all things coconut, I was already addicted. It’s true – ask my roommate. In fact, she even said that’s one thing she thought was “cool” about me (Yes, I took this as a high compliment considering we had a love/hate relationship at the time). Ever since the boom of coconut as a healthy saturated fat, everything now comes in coconut flavor. I can’t complain – it just allows me to get my coconut fix multiple times throughout the day. For instance, I can get it at breakfast

Flap Jack Friday

Happy Friday Everyone!

I dont know about ya’ll, but I am certainly glad that the weekend is here! Huzzah!

Now, I know I constantly mention my love of Beligan Waffles, but I would be doing my other breakfast love a shame. Pancakes were my number one choice back in the day and when going out to eat at a diner. Comfort food at its finest – I’m 99% sure all the worlds problems could be solved with stack of pancakes & coffee.

Cherry Greek Yogurt Pancakes

cherryIngredients:

  • 1/2 cup whole wheat flour
  • 1 large egg
  • 1 container of Chobani’s Black Cherry Greek Yogurt

Directions:

  1. Preheat frying pan on medium heat
  2. Combine ingredients into a large bowl
  3. Use 1/4 cup – 1/3 cup scoops and pour onto pan or griddle
  4. Flip when the pancakes turn golden brown
  5. Enjoy :)

Who Doesn’t Love Pancakes?

Let me rephrase that question – raise your hands if you love pancakes with added fruits and veggies. Yeah, a few hands might go down, but what if I told you you really don’t taste the kale, broccoli or carrots at all. Oh, not to mention these are some of the best pancakes I’ve ever had. Well, let me introduce to you this mix:

I was browsing the isles of Home Goods the other day looking for a new coffee to try out and came across this package. Now, normally I stray away from fruit flavored products. I would rather have an apple or banana instead of it being flavored like one, but with ingredients like this, it was hard to resist.

All organic & mixed with super foods (sweet potatoes!!) I decided to let go of my stance on no fruit flavored mixes. Now lets talk about what makes a good pancake. To me, it has to be thick, hearty and fluffy. I don’t like thinner pancakes so when the Weefulls mix says it makes waffles & crepes, I knew there might be a problem. Alas, they suggested adding an egg to make thick and fluffy pancakes. Naturally, I added an egg (its a leavening agent for baked goods). So glad I did too!

Just look at how thick these babies are! I was very pleased just at the appearance of these babies. Not to mention the smell of apple cinnamon through the house made for a lovely morning. My mom did as why my pancakes were slightly green though. Well mom look what these pancakes are filled with

The flavor was undeniable. Just amazing. The apple tasted just like eating a crisp apple and I could taste hints of sweet potato. Yeah, it was amazing. The texture was fluffy and hearty – not the kind of pancakes that just go right through you. Topped with some Cinnamon Sugar Butter & SF Butter Maple Syrup (sorry, but I’m not sorry) it made for an excellent breakfast.
