That is one of the first lessons I was taught when my lovely little sister was born. Since then, I have done a pretty good job at this. Being the nice person that I am, I am willing to share my favorite overnight oatmeal recipe. I still blame you Megan for getting me addicted to this breakfast…okay not really ;)

Peanut Butter Chocolate Raspberry Overnight Oats chocrasp

Serves: 1

Ingredients:

  • 1 Chobani Raspberry with Dark Chocolate Chips Container
  • 1 Tbsp of Earth Balance Coconut Creamy Peanut Butter
  • 1/3 cup dry oatmeal
  • 1 Luna Bar Fiber – Chocolate Raspberry
  • 1/2 Tbs Chia Seeds

Directions:

  1. Combine oatmeal & yogurt in a bowl and let sit over night, or for a few hours
  2. In the morning, top with peanut butter & crumble the Luna Bar
  3. Serve with a side of fresh fruit for a quick and delicious breakfast

Luna Bar Fiber – Vanilla Blueberry

While the Chocolate Raspberry Fiber bar was a wee bit lack luster, I still wanted to give the other flavors a try! Generally, I love blueberry flavored products – blueberry muffins, cereal bars, yogurt, jams/jellies, etc but blueberries themself? well, not so much. I tried not to have high hopes but I’ll be honest. I did. I was super excited to give these a try.

Plus, this bar has the core 4 – obviously I don’t need blueberries when this is so heavily fortified – nevermind the antioxidants that berries bring ;)

Upon unwrapping the sleek packaging I was hit with a blueberry wiff. Not going to lie when I tell you all that I was majorly disappointed to see my enemies show up on this bar too – those annoying wheat germ sprinklings at the bottom. Compared to the Chocolate Raspberry bar, the Vanilla Blueberry seemed to have more sugar crystals and less of my enemies so all was okay.

As for the taste, it was very very reminiscent of the blueberry nutrigrain bar, which I adore. Nothing artificial about this blueberry flavor at all. In fact, the blueberry fruit on the inside was very natural and smooth. The filling complimented the vanilla crust beautifully. Lets talk about the crust for a minute. It is nothing short of fantastic. Instead of a graham crust, it was straight up vanilla. Loooved it. Reminded me of pit crust.

Blueberry Pie Overnight Oats

So I’ll admit – I’ve never had a slice of pie with fruit in it (except for keylime ;) ). The “chunkies” really make the pie unappealing to me. Yes, I’ve never had apple pie. Yes, I still consider myself an American but no you can’t sue me. However, this creation is what I imagine blueberry pie would taste lie.

Blueberry Pie Overnight Oats

  • 1 packet of Quaker Blueberry Muffin Oatmeal
  • 1 container of Dannon Okios Blueberry Yogurt
  • 1/4 – 1/3 cup Vanilla Almond Milk
  • Vanilla Blueberry Luna Bar
  • Optional: Blueberries
  1. The night before coming the oatmeal packet, container of blueberry yogurt and almond milk into a bowl. Add enough milk to your desired consistency – less milk for more dough & more milk for a thinner consistency
  2. Stir the contents until thoroughly mixed and let it sit over night in the fridge.
  3. In the morning, take out of the fridge and crumble the Vanilla Blueberry Luna Bar
  4. Enjoy :)

The Vanilla Blueberry Lunabar gave the nice graham cracker crust feeling to this delicious doughiness.

Notes:

  • Any blueberry flavored yogurt, oatmeal or bar would work wonderfully – those are just my favorites
  • Great toppings include: shredded coconut, maple almond butter and bananas

Luna Bar – Chocolate Raspberry Fiber

Not going to lie, I am one of those girls that gets super excited when I see a new product that has recently been released. Needless to say, as soon as I saw the brand new Luna Fiber bars at Target I did a little happy dance inside. It was a no brainer that a 6-pack of the cereal bars ended up in my basket.

The original Chocolate Raspberry LunaBar just so happens to be one of my favorite bars in the world. I am a sucker for the combination of chocolate and raspberry. To me, the two just go together like two peas in a pod. I’ll be the first to admit that I had high hopes for this bar. Not to mention, it felt dense as soon as I picked it out of the box.

For the size comparison, it is pretty big for just 110 calories! So far, this bar was looking like an all-star, until I flipped it over. Let me preface by saying I despise wheat germ/crumb coatings (unless its on muffins ;) ) Thus, I had mixed feelings because top had a nice sugar topping but the bottom had a grainy coating. Whats a girl to do!? Dig in of course :)

Texture: Moist immediately came to mind! The bar felt as if it were freshly baked. As soon as I split it in half though I noticed that it was fruit filled. The raspberry fruit filling was sticky but I could see the legit raspberry seeds inside the filling. However, the chocolate crust easily fell apart around the raspberry spread inside.

Taste: Not going to sugar coat this one – I was disappointed. Not only did the raspberry filling taste artificial, but the chocolate cereal coating lacked flavor. The sugar crystals at the top really did not contribute to much and the wheat germs at the bottom really just threw off the flavor combination as a whole. The bar was trying to be sweet but the germs about the bottom made it more grainy/nutty. One the plus side, there were a few chocolate chips spread throughout the bar.
