I thought I would show you one of my FAVORITE meals as of late. And when I say favorite, I mean favorite. I probably have it every night or for lunch. I just can’t stop, won’t stop.
As I mentioned, I am a frozen food junkie. Yes, the sodium is usually sky high, but I need the salt to keep me hydrated during these hot & humid mornings. I don’t normally pick up Lean Cuisines, Smart Ones or Healthy Choices unless they sound really good. Case in point, this guy:
With the promise of chicken, zucchini, onions and black beans I wanted to try it out! Naturally, this Mexican theme dish needed some salsa on the side. Had a little too many peppers for my liking, but overall it was pretty good.
However, this is not the star of my meal. Oh no – that would be my baked potato. Friends, I can’t get enough of them. Whether it is a Russet or Sweet Potato, I have to have one. I love the soft starchy consistency. Not to mention they make great vehicles for Wholy Guacamole & Laughing Cow Cheese Wedges!
Now this was a lunch because the frozen entree was on the light side for me. If I make this into my dinner I usually have a burrito via Amy’s or Evol to get some more energy in. I could eat variations of this meal for weeks & not get tired. Sadly, I have been
