Mexican Tater

Thank you all so much for your sweet and kind words on my last post! I didn’t really know what to expect when I hit the publish button, but I really enjoyed hearing what you all had say about your diets and what works for you. Like I said, no two people are the same :)

I thought I would show you one of my FAVORITE meals as of late. And when I say favorite, I mean favorite. I probably have it every night or for lunch. I just can’t stop, won’t stop.

As I mentioned, I am a frozen food junkie. Yes, the sodium is usually sky high, but I need the salt to keep me hydrated during these hot & humid mornings. I don’t normally pick up Lean Cuisines, Smart Ones or Healthy Choices unless they sound really good. Case in point, this guy:

With the promise of chicken, zucchini, onions and black beans I wanted to try it out! Naturally, this Mexican theme dish needed some salsa on the side.  Had a little too many peppers for my liking, but overall it was pretty good.

However, this is not the star of my meal. Oh no – that would be my baked potato. Friends, I can’t get enough of them. Whether it is a Russet or Sweet Potato, I have to have one. I love the soft starchy consistency. Not to mention they make great vehicles for Wholy Guacamole & Laughing Cow Cheese Wedges!


Now this was a lunch because the frozen entree was on the light side for me. If I make this into my dinner I usually have a burrito via Amy’s or Evol to get some more energy in. I could eat variations of this meal for weeks & not get tired. Sadly, I have been ;)

Oh, we can’t forget a little sweetness, can we?

  1. I always had a couple of frozen meals tucked away in my freezer at uni for days when the fatigue hit particularly badly, I have to say they are a great comfort! That one looks delicious, plus I love guacamole so it’s definitely a good meal for me :-)

  2. I used to buy that frozen Chicken Santa Fe entree all the time when I was in college! It brings back so many memories! I used to add a Laughing Cow cheese wedge to make it creamy. :) I stay away from frozen food for the most part now, but occasionally I’ll treat myself to Amy’s Cheese Enchilada meal when I’m short on time (if you haven’t tried it you should…SO good!).

  3. that looks good! I am like you, I rarely buy frozen meals not because of what is in them but because it is not enough! I always have to add things to it to make it enough food for me. I am glad you addressed that,I hate when people say they ate a little meal like that. That would last me about a second of fullness. So, I am not a fan of chocolate but coconut… I kind of want to try that.

  4. Coconut Hershey kisses are my favorite! I remember downing bags of them when I let myself go with my first pregnancy haha now I’m craving some Mexican, that frozen entree does look good, the only time I ever eat them is when I’m pregnant and would need something fast before I got sick, but you are right they are light and never seem to satisfy, smart idea to add to it with your potato and guac!
